This Easy Pecan Pie Bars recipe is one of my husband's favorite desserts. They have all the sweet crunchiness of Pecan Pie with a delicious shortbread crust baked on a sheet pan. It's an easy way to enjoy Pecan Pie in a bite-size square that's a breeze to serve!

But I have a confession. I almost never make them for him because cleaning up the pan afterward can be a nightmare. He actually asked me to make the bars for him last Christmas and I'm just now getting around to it. Please tell me I'm not the only one who does such things?!

Since it's been months since he asked me to make him this dessert, when we decided to host a get-together over the weekend, I made up my mind to make him the Easy Pecan Pie Bars for dessert - crusty sheet pan and all.

Why You'll Love this Recipe

My husband loves these for so many reasons, but he generally thinks most Pecan Pies have too much of the gooey stuff in the middle. These are perfect because they have the light buttery shortbread crust, plus a thin layer of the pecan pie "gooey" filling, then lots of crunchy pecans on top! Don't they sound delish?

That's why these Easy Pecan Pie Bars are perfect for us. We get all the flavor and crunch of Pecan Pie plus a delicious shortbread crust and a tiny bit of buttery, sweet filling, but it's not overwhelming.

How to Make Pecan Pie Bars

In a large bowl, add flour, butter, sugar, and salt, then mix until combined. This is a shortbread-type dough and the mixture will be dry and crumbly.

Spray a half sheet pan (13" x 18" x 1") with non-stick spray, then firmly press the dough into the pan, covering the bottom (but not the sides). Bake the crust at 350°F for 15-20 minutes or until light golden brown.

I guess that's another thing I love about this recipe. When you make sheet pan pecan pie bars, there are so many more servings than your average pie! That's a win-win!

While it's cooking, you're going to make the filling. Start by mixing together the eggs, sugar, salt and light corn syrup in a medium bowl.

Then stir in the chopped pecans. And pour the filling over the baked crust on your sheet pan:

When it's all spread out evenly, bake for another 25 minutes at 350°F.

Let it cool and set for at least one hour, then cut into squares and serve! I've found the easiest way to cut these is to use my Pampered Chef pizza wheel.

I use the round wheel to cut all the center and that little flat part on the other side to cut really close to the edges. I know it sounds odd, but trust me... it works beautifully! (Note - I'm not affiliated with Pampered Chef in any way - I just love this tool).

Description

Instructions

  1. Preheat the oven to 350 degrees and spray a half sheet cake pan (13"x18"x1") with non-stick spray.
  2. In a large bowl, use a hand mixer to mix together the flour, butter, sugar, and salt. This is a shortbread dough and it will be dry and very crumbly.
  3. Press the dough firmly into the prepared pan, covering the bottom but not the sides.
  4. Bake for 15 minutes or until light golden brown
  5. While it's baking, make the pecan pie filling by mixing together the eggs, sugar, corn syrup, butter and vanilla. Stir in the chopped pecans.
  6. Pour the filling over the baked crust and spread it out evenly.
  7. Bake about 25 minutes or until filling is set. Allow it to cool for at least 1 hour (the filling will be set).
  8. Cut into squares and serve!

    Hi Rose,

    Love the recipe. I adore anything pecan pie'ish but the thing that really got my attention was the oil bottle with your dish washing liquid on the organizer. LOVE that idea! Never thought about using a "pretty" bottle for the dish soap.

    Those look ldelicious! I've made a similar pecan pie bar and lined the pan with Parchment for super easy clean up.

      Yes! I've used parchment in the past and it helps for the bottom of the pan but I still had fits with the edges. It doesn't matter though - the hubby says they're worth all the elbow grease I can muster 😉

    You can make the parchment a bit larger than the sheet pan so it covers even the sides of the pan. Just press your crust to the corners and the parchment will mold itself. It sticks up on it's own. That's what I used to do before I purchased a pan extender. Still, I cover my pan extender with parchment (there's a certain way to do it) for easy clean up. For the record, I want to give this recipe 5 stars but the link won't let me go higher than 3 (?).

    I can't find that sheet pan . . .can you adjust it to a 13X9 pan?

      I haven't ever tried it, but I'm thinking you could cut the recipe in half and it would work on that size sheet pan. 🙂
