A cheese fondue usually doesn’t contain any butter or cream. The cheese is plenty rich already. Just start your fondue with white wine, mustard, garlic, paprika powder, nutmeg and pepper.

I found this a very tasty fondue, better than I expected, and the breadcrumbs are a great topping. I used one butternut and one acorn squash, and baked both of them halved with olive oil and salt/ pepper; served them with the fondue and bread crumbs. I skipped the mustard powder and lemon, and I used anchovy paste instead of opening a can of anchovies for this

Tried this with one acorn squash filled with melted pepper jack cheese sprinkled with freshly roasted crushed cumin seeds. Was a hit on a chilly Saturday night as an appetizer! Also served some roasted sliced parsnips and turnips for eating with the melted cheese.

I never know what to do when I get a squash in my local farmer subscription basket but I do love cheese. I used store-brought fondue (I live in France) and it was sooooo good. I'm sending this to all my friend that hated squash to change their mind

Cut off the stem then cut the squash in half from top to bottom. It’s much easier to scoop out the seeds this way plus you get two bowl-shaped pieces with more surface area for breadcrumbs. Skipped the cream and didn’t miss it

Made my own fondue with cheeses and white wine, used honey nut squash and the breadcrumbs from this recipe. Fabulous!

Wow! This was really good. I sauteed onions and mushrooms, then added them on top of the split pieces of roasted squash. I made the fondue with Swiss, and I didn't bother with the cornstarch. The lemon zest in the bread crumbs was a great addition. Very filling as an entree. Next time I will try subbing yogurt for cream.

Made recipe as written and served it at table - wonderful and very dramatic - used large acorn squash which may have made it more it more "solid".

I need to make this without alcohol. However am concerned that subbing with apple cider and cider vinegar in this recipe would be a bad idea since there is heavy cream involved. Comments?

Also, make sure the squash is very very hot so it keeps the cheese warm.

Was good, I thought, and I definitely cut some corners and a few ingredients (8 oz of cheese instead of 12, mustard instead of mustard powder, 1/2 and 1/2 and sour cream instead of cream. Add as needed to the cheese (which I "coated" in the cornstarch before melting). The breadcrumb recipe now has its fan club. Another MC hit !

This reminds me a little of the recipe for stuffed pumpkin from Bon Appetit a number of years ago, except instead of bread crumbs on top, bread was layered inside with the other ingredients—almost like a savory bread pudding that gets scooped out with the pumpkin. It’s a good recipe (easy to adapt the filling with different cheeses and additions like sautéed mushrooms or ham etc—you can even shift flavors entirely with substitutions like curry powder and paneer) Great cozy winter food!

Fantastic! My foodie husband hasn't praised a dish like this in a long time. I used light cream, fyi. In eating, we scooped out the flesh and didn't break the shell. Served with a little bresola on the side.

Actually one other item I modified was serving instructions. I just cut up the squash in halves and placed on the individual dinner plates and spooned some fondue over them, then topped with the gluten free bread stuffing. I didn't make stuffing - just used the GF stuffing cubes as substitute for panko. Everything was practically licked off plates so no mess!

I made with gluten free bread stuffing mix as a substitute for the panko crumbs and that gave it such a nice texture. Otherwise I followed directions and it was huge hit with the family!

I too came looking for the video - mostly to see how to cut and serve the dish without making a big mess.

This was a strange dish. I was thinking of making it for a holiday family gathering, but thought I should try it first. Serving it was messy and awkward. The fondue part was tasty, but the squash kind of diminished the whole cheesy yumminess. We had made some toast points in case there was extra sauce, and decided that fondue with toast can't be beat. Fondue, yes. Stuffed squash, yes. Fondue stuffed squash, not so much. (we used carnival squash)
