Omelette isn't usually high up in the list of my boy's favourite meals, but they bothabsolutelyloved this one, Small Child even took some of the leftovers to school in his lunch box today, so I'll definitely be making it a again very soon! Ingredients:

  • 350g new potatoes
  • 1 large red onion
  • 75g chorizo sausage
  • 6 large British Lion eggs
  • 1 tbs vegetable oil
  • fresh chives(optional)

Method:

Start by cooking the new potatoes - place in slightly salted water, bring to the boil and cook for 10-15 minutes until tender.

Prepare the rest of the ingredients: peel and slice the onion, slice the potatoes, slicethe chorizo sausage if needed (I used read cut chorizo chunks), break the eggs into a bowl and beat.

Heat the oil in a frying pan then fry the onions for 2 minutes until beginning to soften. Add the potato slices and chorizo and continue to fry for 3 more minutes.

Preheat your grill to a medium/hot setting, then pour the beaten egg over the mixture in the frying pan and leave to cook for 6 minutes without stirring. Pop the omelette under the grill and cook for a further 2 minutes or until the omelette is cooked through.

Whilst the omelette is finishing off cooking, finely chop a few chive stalks for garnishing if wanted.

Tip out of the pan onto a plate, sprinkle with the chopped chivesand cut into wedges to serve. We had ours with a leafy salad, cherry tomatoes and cucumber, yum!

Cool any leftovers quickly and store in the fridge, this omelette is delicious hot or cold so perfect for lunch boxes.

I bet my two would love this for their tea. I normally do omelette for them before swimming as it's fairly light and quick to cook. I'm going to have to try this style next time

I love omelettes but somehow always forget to make them if that makes sense! Chorizo, potatoes and onions are just perfect in omelettes aren't they? Loved your video. I have to start filming videos of my recipes. They always look great and so simple to follow! Ah if I had all the time in the world 🙂

Wow! This looks delicious, I make similar one but the onions go as small pieces in it and I mix all the ingredients together along with pepper and little turmeric powder and cook everything together. 🙂

What is the difference between Spanish omelette and Mexican omelette? ›

The most common form of omelet eaten in Spain uses potatoes: the tortilla de patatas. On the other hand, Mexican tortillas are flatbreads traditionally made with corn, though wheat is also used in some regions. They are often a base for other ingredients, such as in tacos.

What is the secret to a perfect omelette? ›

Whisking air into the eggs is one secret to a fluffy omelet. Also, if you cook the omelet in a pan that's too large for the number of eggs used, it will naturally be flatter. On the other hand, you don't want to overload a small pan. This only increases the time needed to cook the eggs and can lead to a rubbery omelet.

What is the difference between a frittata and a Spanish omelette? ›

The Frittata (Italian) and the Tortilla (Spanish) are very similar. The main difference between them seems to be how the eggs are finished. Both begin with the filling and the eggs, cooked on a hob in a frying pan. The frittata is traditionally finished in the oven and the tortillas are flipped and finished on the hob.
